This Chicken Rice indeed all in One-Pot. Easy to prepare, cook and wash.
End result is flavourful.  Indeed will be kept in my recipe journal.
Lastly., would like to wish all Mothers in this world "Happy Mothers' Day" and
may you be blessed with wonderful, healthy and joyful life.

Yeap, we did not go out for celebration because I know all restaurants will be
filled with people and the food cooked will not be delicious.
So, end up cooking this simple dish only.

We indeed have great chatting and bonding while eating this yummy delicious chicken rice.

Lastly, I would like to thank to Selinna Teoh, DHM for sharing this recipe.
She used rice cooker to cook her chicken rice.

Ingredients :-

  1. 2 whole Chicken Legs and 2 pairs of Chicken Wings.
  2. Slit the chicken legs and wings so that marinade will go deeper into the meat.
  3. Marinade the chicken legs and wings with 4 tbsp of Oyster Sauce, 2 tbsp Light Soya Sauce, 1 tsp Salt, 2 tsp Chinese Cooking Wine, 2 tsp Sesame Oil for 3 hours (the longer the better).
  4. Blend 7 Shallots, thump size Ginger, 7 Garlic.
  5. Wash and drain 2 1/2 cups of Rice.

  1. Heat up 3 tbsp of cooking oil.
  2. Add the blended shallot, ginger and garlic and fry for 2-3 minutes.
  3. Add the rice and stir for 1-2 minutes.
  4. Switch off the fire.

  1. Transfer the rice to the pressure cooker pot.
  2. Add 3 tbsp of Chicken Stock.
  3. Stir well.
  4. Pour appropriate water. (Pls don't put more water.  No worry, the chicken will be cooked)
  5. Place all the chicken legs and wings on top of the rice and press in slightly.
  6. Cook until done.

When my family told me to keep the balance to eat later, I know I have nourished them with
delicious food cooked by their lovely mother/wife.
